Nut butter cups are a delicious snack, however they are super easy to over indulge on! This recipe uses 100% almond butter, dates, cacao powder and other delicious ingredients for a nut butter cup alternative that is tasty, nourishing and vegan. The perfect sweet treat recipe for Veganuary!



1. Melt the almond butter over a bain-marie and add to a blender along with the dates, blend until smooth and then add the cashew pieces

2. Melt the coconut oil over a bain-marie and add in the cocoa powder and agave nectar, stir until combined

3. Line a muffin tin with 6 bun cases

4. Pour half the cocoa powder and coconut oil mix into the bottom of the 6 bun cases, then use a spoon to push the mixture ¾ of the way up the sides of the bun cases. Place in the fridge to set for 30 minutes

5. add a scoop of the almond butter mixture to each bun case and put back in the fridge for another 30 minutes

6. Reheat the remaining cocoa powder mixture and add to the top of the nut butter cups, gently tap the muffin tin on a flat surface to give an even coating

7. leave to chill for at least one hour then remove rom the cases, decorate how you like and enjoy! we topped ours with a drizzle of Zeina smooth pistachio butter for some extra deliciousness
