During the festive season, a great way to show loved ones that you care is by taking the time to make homemade presents for them. We’ve come up with a delicious recipe for salted caramel cashew brittle that would make the perfect Christmas gift, and is sure to impress guests at Christmas parties! We’ve even used this to decorate the top of our Christmas cake


  • 200g Zeina Cashews (or you can use Zeina Cashew pieces for a different texture!)
  • 90g unsalted butter, or margarine to make it vegan
  • 200g caster sugar
  • 20ml water
  • A pinch of salt
  • 1/2 tsp cinnamon (optional)


1. Add the sugar, butter and water to a pan and slowly heat up until all of the sugar has dissolved

2. Once the sugar has dissolved, quickly bring the pan to a boil and leave to boil for 5 minutes until the mixture turns to a golden brown colour

3. Add a pinch of salt, cinnamon if using and the Zeina cashews and stir until they are evenly coated

4. Pour onto a tray lined with greaseproof paper, sprinkle with salt and leave to cool for around 1 hour

5. Once cooled, use a rolling pin to crack the brittle into rough shapes
