It’s spooky season! This recipe is sure to get you in the festive spirit, and is a great hit at Halloween parties or even just as a snack. The feta cheese adds a delicious creaminess and we’ve added Zeina pine nuts and pecan pieces for that extra bit of texture and crunch

Ingredients

  • 200g peeled and chopped butternut squash
  • 200g peeled and chopped pumpkin
  • 1 bulb of garlic
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 leek
  • 100g Feta cheese
  • 50g Zeina Pine Nuts
  • 50g Zeina Pecan Pieces
  • 1 pack of ready rolled shortcrust pastry (or you can make your own!)
  • 1 egg
  • Salt and pepper

Method

1. add the butternut squash, pumpkin and garlic to a pan, drizzle with olive oil and season with salt and pepper, bake at 180’c for 30 minutes

2. While the squash is cooking, add the Zeina pine nuts and pecan pieces to a pan and toast for around 5 minutes until golden

3. Add the butter to a pan, finely chop the leek and cook until soft

4. Transfer the cooked squash and garlic to a large bowl, add in the feta cheese, leek, pine nuts and pecan pieces

5. Roll out the pastry and use a cookie cutter to cut out circle shapes

6. Add a spoonful of the squash and feta mixture onto half the circles

7. Cut out pumpkin faces on the other half of the pastry circles and add them on top of the pies, seal the edges with a fork and wash with egg for a golden bake

8. Bake in the oven at 200’c for 20 minutes until the pastry is golden brown, and enjoy hot or cold!
