Looking for a delicious twist on a Christmas classic? well look no further!

We’ve combined the traditional aspects of a Christmas cake and put a Zeina spin on it, for a flavourful recipe that is sure to impress everyone this festive season. This Christmas cake is alcohol free and so can be enjoyed by the whole family

Ingredients

Method

1. Add the mixed fruit and orange juice into a pan and simmer for 20 minutes, set aside to cool for at least 30 minutes

2. Heat the milk until it reaches a simmer, add the saffron and set aside to cool for at least 30 minutes

3. Whish the sugar and butter until it becomes fluffy and slightly paler in colour

4. Add the ground almonds, flour, eggs, spices and milk and saffron mixture and whisk until fully combined

5. Roughly chop the hazelnuts and pistachio kernels, then slowly fold them into the batter along with the fruit soaked in orange juice

6. Pour the mixture into a cake tin and bake at 150’c for 2 and a half hours

7. Once the cake has cooled, roll out the marzipan and cover the cake with it, then press the chopped pistachios into the marzipan until the entire cake is covered
