Amaranth is a type of pseudo-cereal, which means that while it is not technically a cereal like oats, it does have similar nutritional values and is often used in similar ways. one of the amazing features of amaranth is that you can pop it by placing it in a hot pan for around 10 seconds! it is a great option for anyone following a gluten free diet, and is packed full of fibre and nutrients. We’ve paired it with some Zeina 100% pistachio butter for even more fibre, nutrients and a good source of protein. (plus some chocolate to make it taste even better!)



1. Heat a pan on high heat and add the amaranth in 1 tablespoon at a time, cover with a lid straight away and the amaranth should pop in around 5-10 seconds. Remove from the pan and repeat until you have 100g popped amaranth

2. Melt the pistachio butter, chocolate and coconut oil over a bain marie until glossy and smooth, then add in the vanilla extract

3. Combine the amaranth with the chocolate mixture and press into a baking tin covered with greaseproof paper

4. Top with the chopped pistachios and press in slightly, then leave in the fridge to set for at least 2 hours and cut into bite sized pieces
