To celebrate the return of the Great British Bake Off, we are sharing our recipe for this delicious chocolate fudge cake. Even better – it’s gluten free! We used ground almonds in this recipe in replacement of wheat flour, which is a tasty alternative. GBBO is back at 8pm on Channel 4 tonight!

Ingredients

For the cake:

  • 200g Dark Chocolate
  • 120g Unsalted Butter
  • 165g Caster Sugar
  • 3 Large Eggs
  • 1 tsp Vanilla Extract
  • 17g Cocoa Powder
  • 1/2 tsp Baking Powder
  • 190g Almond Meal/Ground Almonds

For the glaze:

  • 150g Icing Sugar
  • 27g Cocoa Powder
  • 2 tbsp Water
  • 2 tsp Vanilla Extract

Equipment

  • Glass bowl
  • Small saucepan
  • Mixing bowl
  • Electric whisk
  • Wooden spoon
  • 2 x 18cm round baking trays
  • Skewer

Instructions

  1. Preheat the oven to 170C.
  2. Butter and line 2, 18cm, baking trays.
  3. Melt the chocolate and butter in a glass bowl over a saucepan of boiling water, stirring in between until smooth.
  4. Whisk in the caster sugar. Add 3 large eggs and vanilla extract, whisking well until combined and smooth.
  5. Switch to a wooden spoon. Add cocoa powder, baking powder and almond meal, fold through until it is just combined as to not overmix.

  6. Pour batter into the baking trays, bake for 20-25 minutes until the top has a thin crust and a skewer comes out clean.
  7. Cool the cake in the baking trays for 10 minutes, and leave on a cooling rack. Cool completely on rack before carefully removing the baking tray.
  8. While the cakes are cooling, mix together all of the ingredients for the glaze with an electric whisk.   
  9. Pour your chocolate glaze between the layers, and on top of the cake, and enjoy!
