today at Zeina Foods we’re going nutty for this traditional Czech snow cake, the recipe was given to us by our technical assistant who is from the Czech Republic! The meringue on top makes it look like the cake is covered in snow, and since it’s full of nuts, we can justify this as a healthy treat! (sort of… not really)
the cake is made in 3 separate parts, the biscuit base, the caramel nut filling, and the meringue (or snow) topping
equipment
- large mixing bowls
- baking tin/tray
- rolling pin
- blender/food processor
- pan
- wooden spoon
- knife
- whisk
ingredients
for the base
- 40g icing sugar
- 1 tbsp vanilla extract
- 100g unsalted butter
- 200g self raising flour
- 2 egg yolks
for the filling
- 100g caster sugar
- 400g mixed nuts (we used Cashews, Almonds, Pistachios and Hazelnuts!)
- 125ml water
- 6 tbsp your favourite jam
for the top
- 2 egg whites
- 250g icing sugar
- 1 tbsp lemon juice
method
for the base
- mix the icing sugar, vanilla extract, butter and self raising flour in a bowl
- add the egg yolks and mix until it forms a dough
- roll out the dough onto your baking tin/tray
- place in the oven to cook for 10 minutes at 170°c
for the filling
- while the base is cooling, blitz the nuts in a blender until they are finely chopped
- heat the sugar and water in a pan to make a caramel, then coat the ground nuts in this
- let it cool while you make the topping, then add the jam to the dough, and then the nut mixture on top
for the topping
- whisk the egg whites, icing sugar and lemon juice together until stiff peaks form
- cover the top of the cake with the mixture
- place in the oven at 180°c for 15 minutes
