Stuck for dinner ideas in the heat? why not try this super quick and easy summer tart! The light filo pastry makes it the perfect meal on those warmer evenings, and it’s packed with delicious flavours from the fresh figs, sweet pistachios and creamy cheeses

Ingredients

  • 1 pack of filo pastry
  • 100g melted butter
  • 300g caramelised onion chutney
  • 1/2 block feta
  • 100g goats cheese
  • 3 medium figs
  • 100g sugar
  • 150g Zeina Pistachio Kernels – chopped
  • 2 tbsp honey

Method

  1. Preheat the oven to 180’c, butter a baking tin and layer up your filo pastry, spreading a thin layer of butter in between each sheet

2. Spread with the caramelised onion chutney

3. Top with the goats cheese, crumbled feta and sliced figs

4. Bake at 180’c for around 30 minutes

5. While the tart is in the oven, make a caramel by heating the sugar, then add the chopped Zeina pistachios and leave to cool

6. As soon as the tart comes out of the oven, sprinkle over the caramelised pistachios and finish with a drizzle of honey
