December 22nd is national date and nut day, so we’re celebrating with this delicious vegan cookie dough cheesecake, which is absolutely packed full of nuts and delicious Tunisian Deglet Nour dates, which give an amazing caramel flavour. Celebrate national nut and date day with us and have a go at creating your own! The recipe is super easy and only requires a bowl, blender and cake tin.

Ingredients

Date and nut base

Vegan cookie dough

  • 100g plain flour
  • 60g melted coconut oil
  • 30g maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 80g vegan chocolate chips

Vegan cheesecake filling

  • 325g raw cashews
  • 170g maple syrup
  • 60g melted coconut oil
  • 60ml lemon juice
  • 2 teaspoons vanilla extract

Method

  1. Place the cashews in a bowl, cover with water and leave to soak overnight cashews vegan cheesecake soak
  2. To make the cookie dough, add all the ingredients into a bowl and mix until it forms a soft dough and leave to set in the fridge while you make the rest of the cakevegan cookie dough recipe cheesecake
