it’s national biscuit day, and you know what that means! yep, we’ve got another delicious and nutty recipe for you. this time it’s for salted caramel and pecan biscuits (or cookies if you’re American), they’ve got the perfect balance of saltiness and sweetness, and since they’re chocked full of pecans they’ve got a lovely luxurious feel to them too. lets get baking


  • 120g unsalted softened butter
  • 100g caster sugar
  • 1 egg
  • 190g plain flour
  • 1 egg
  • 100g salted caramel or fudge pieces
  • 100g chopped Zeina pecans
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • salted caramel sauce for drizzling


  1. preheat the oven to 180’c and line your baking tray with grease-proof paper
  2. mix the butter and sugar together until light and fluffy
  3. add in the egg and vanilla and mix well
  4. add the flour, bicarbonate of soda and salt and fold until you have formed a dough
  5. add the fudge/salted caramel pieces and chopped pecans and stir until combined
  6. scoop a spoonful of mixture out of the bowl, roll it into a ball and place it on your baking tray, press down slightly to flatten
  7. bake the cookies for 10-12 minutes in the oven and leave to cool before drizzling them with your salted caramel sauce
