loving the British summer but not sure what to cook in the heat? why not try making this delicious salsa verde, it’s juicy and refreshing perfect for summer! It’s also super hydrating thanks to al the vegetables, so is a great way to keep hydrated and cool in the heat. We’ve paired with tortilla chips for a snack, but you can pair with mats and raw veggies to make a satisfying and easy dinner

Ingredients

  • 50g Zeina pistachio kernels
  • 100g fresh parsley
  • 50g fresh mint
  • 4 small shallots
  • 3 cloves of garlic
  • 125ml extra virgin olive oil
  • 60ml fresh lemon or lime juice
  • 2 tbsp capers (optional)
  • 1/2 tsp chipotle chilli powder
  • salt and pepper to taste

Method

1. Toast the Zeina pistachio kernels in a pan for 5 minutes

2. Roughly chop the garlic and shallots and add to the blender

3. Add the toasted pistachios, mint, parsley, chipotle powder & capers and blend until it reaches slightly thicker than your desired thickness

4. Add the olive oil and lime juice, along with salt and pepper to taste, then blend until it reaches your desired thickness
