everyone needs a little bit of unicorn magic in their lives, and we think these sparkly unicorn shortbreads might just hit that spot! We’ve also added pistachios and pistachio butter to make them extra yummy. don’t forget you can make these in whatever shapes you like, maybe a bunny shape for a delicious Easter treat

Ingredients

For the icing

  • 250g icing sugar
  • 30ml warm water
  • 3 drops pink food colouring
  • glitter to decorate (optional)

Method

  • 1. Preheat the oven to 180’c
  • 2. Mix the sugar and butter together until smooth, then add the salt
  • 3. Add the pistachio paste then the flour and mix well
  • 4. Pour in the chopped pistachios and stir until mixed in
  • 5. Roll the dough out until it is around 1/4 inch thick
  • 6. Cut unicorn shapes out using a cookie cutter
  • 7. Place in the oven for 10-15 minutes, until golden brown
  • 8. Mix together the ingredients for the icing and spread on the biscuits once they have cooled
  • 9. Decorate with glitter and anything else you like!

All that’s left to do now is serve and enjoy, and try not to eat the entire batch all at once!
