The perfect balance of fruit and nut, an earthy bite with a sweet tarty flavour, try this delightful recipe and you’ll be baking everyday!

  • 2 eggs
  • 1/4 cup plant based milk
  • 1/3 cup yoghurt
  • 1/4 cup olive oil
  • touch of vanilla
  • pinch of salt
  • 1 cup Zeina Ground blanched almonds
  • 1 cup plain flour
  • 2 tbsp baking powder
  • 1/4 cup sugar
  • handful of frozen raspberries
  • 100g chocolate chips
  • Zeina blanched Hazelnuts

How to:

  1. Preheat the oven to 190°c and set up muffin liners into tins.
  2. In a stand mixer, mix the eggs, milk, yoghurt, olive oil, vanilla and salt until fully combined.
  3. In a separate bowl, add the almond meal, flour, baking powder and sugar
  4. Add the dry ingredients to the main bowl and once mixed in, add the raspberries and chocolate chips.
  5. Pour the mixture into the muffin tins and top with hazelnuts.
  6. Set in the oven for 25 minutes and the top is golden
  7. Let it cool until ready to enjoy!
