these feta and walnut sausage rolls are perfect for meat free mondays, and you can’t even tell they’re meat free thanks to the delicious flavours! we’ve used ready made pastry to make these a quick and easy vegetarian snack, perfect for lunch boxes and grabbing straight out of the fridge

Ingredients (makes 24)

  • half a chopped red onion
  • 2 tbsp mixed herbs
  • 100g Zeina walnuts
  • 150g feta cheese
  • 100g rolled oats
  • 1 egg
  • 1 tbsp soy sauce
  • 50g breadcrumbs (ideally fresh)
  • puff pastry
  • poppy seeds to sprinkle on top


  1. Preheat the oven to 180’c
  2. Add the walnuts and rolled oats to a food processor, blitz until almost smooth
  3. Mix the rest of the ingredients into a bowl (save a bit of egg to brush the pastry with!)
  4. Add the mixture to the rolled oats and walnuts, and blitz until combined
  5. Pop the mixture in the fridge for half an hour to allow it to firm up
  6. Place the filling along the long edge of the pastry
  7. Fold the pastry over the top, brush with egg and sprinkle with poppy seeds
  8. Cut into small sausage rolls and place in the oven to bake for 20 minutes
