The 3rd recipe in our series of iftar and suhoor recipes for Ramadan is this delicious and energising rice pudding!
We’ve used saffron, honey and cardamom to give it an amazing flavour and have added some Zeina date roundels for extra energy, plus it’s topped with pistachios to make it even more decadent and delicious

Ingredients

Method

1. Rinse the rice until the water runs clear

2. Add the rice into a pan along with the milk, cream, sugar and vanilla and leave to simmer for 25 minutes

3. While the rice is cooking, mix saffron with a small amount of boiling water and leave for 5 minutes to steep

4. strain to remove the pieces of saffron and add the ground cardamom and honey to the water

5. add the water, honey and cardamom mix to the pan and stir

6. add the date slices

7. serve into individual bowls and top with the chopped pistachios
