here’s a delicious vegan pasta dish recipe that’s so tasty you won’t miss the meat! We’ve made a sauce using cashew nuts to give it that indulgent creamy texture, plus it tastes even better when topped with your favourite vegan parmesan substitute

Ingredients

  • 150g Zeina Chopped Cashews
  • 120ml water
  • 4 shallots
  • 4 cloves of garlic
  • 50ml olive oil
  • 2 cans chopped tomatoes
  • 1 can tomato puree
  • dried oregano to taste
  • salt and pepper to taste
  • 2 tbsp capers
  • 400g your favourite pasta or spaghetti
  • fresh basil to serve

Method

1. Place the cashew pieces in a bowl with the water and leave to soak for 1 hour, then blend until they reach a creamy consistency, salt to taste and set aside to use later

2. Add the olive oil to a pan and heat, then chop and add the shallots and garlic until softened

3. Pour in the tomatoes and tomato puree, then add the oregano, salt and pepper and stir while bringing to a boil

4. Once the sauce is bubbling, lower it to a simmer and leave for 20 minutes, then add the cashew cream and capers

5. Leave the sauce to simmer for another 10 minutes while you cook the pasta according to the pack instructions

6. Transfer the cooked pasta into the sauce with a little of the pasta water and stir until combined. serve with the fresh basil and a drizzle of olive oil
