at Zeina HQ, we’ve been racking our brains to try and make a delicious cupcake recipe that’s a little bit better for you than your average cupcake, and we think we’ve cracked it! it’s by no means a garden salad, but we’ve made a few tweaks here and there to try and make this slightly healthier while still giving you that indulgent feel of a delicious bun

Ingredients

  • 120g wholemeal flour
  • 120g self raising flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 125ml olive oil
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 150g muscovado sugar
  • 300g grated carrot
  • 2 large eggs
  • 150g raisins or sultanas
  • 1 orange
  • 30g Zeina walnuts
  • 30g Zeina pistachio kernels
  • 150g unsalted butter
  • 150g icing sugar
  • 300g light cream cheese
  • 1 tsp vanilla extract

Method

1. preheat the oven to 160’c

2. zest the orange and squeeze the juice into a bowl. add the raisins and leave them to soak

3. mix the wholemeal flour, plain flour, baking powder, bicarbonate of soda and spices together

4. crack 1 egg into a bowl, separate the second egg and add the yolk to the bowl with the first egg. save the leftover egg white for later!

5. add the sugar to your whole egg and yolk, then whisk until it becomes foamy. slowly fold in the flour mixture

6. fold in the grated carrot, raisins, olive oil, walnuts and pistachios

7. whisk the egg white up with a pinch of baking powder and fold into the cupcake mixture

8. scoop the mixture out into bun cases and place in the oven for 20 minutes

9. while the buns are cooking, mix together the butter and icing sugar until it becomes smooth

10. add the cream cheese to the mix and mix until smooth and thick. place in a piping bag in the fridge while the buns cool, and then use this mixture to ice the buns however you like!
