The final recipe in our series of iftar and suhoor recipes for Ramadan is biscoff and date energy balls! the dates are added to a pan with melted butter to make them taste even more like caramel & then mixed in with chunks of biscoff AND rolled in biscoff crumbs too! you could add any of your favourite dried fruits or nuts to this recipe to personalise it, or even swap out the type of biscuit for your favourite! Plus, if you swap the butter for margarine, these delicious energy balls are completely plant based



1. Soak the date slices in water for 10 minutes

2. Melt the butter in a pan and add in the soaked dates, stir until the dates become very soft

3. Add the date mixture to a food processor and blend until smooth

4. Add the almond powder to the food processor and blend

5. Transfer the mixture to a bowl and stir in the biscoff pieces

6. Roll the mixture into balls and coat in the biscoff crumbs, then leave to set in the fridge for at least 2 hours
