what’s better than a Bakewell tart? bitesize Bakewell tart squares! perfect for lunch boxes, these have all of that delicious Bakewell tart packed into a tiny bite!

Ingredients

For the pastry

  • 160g plain flour
  • 100g Zeina Blanched Ground Almonds
  • 110g caster sugar
  • 1 tsp salt
  • 150g unsalted butter
  • 1 tablespoon milk

For the filling

Method

1. Preheat the oven to 180’c and line a square baking tin with foil, making sure to leave some excess over the edges so you can use it to remove the squares later

2. To make the pastry, mix the flour, blanched ground almonds, sugar and salt together in a bowl

3. Add the butter and mix with your hands, then add the milk and mix with a spoon until it forms a dough like consistency

4. Place the pastry into the baking tin and put in the freezer for 30 minutes, then bake in the oven for 20-25 minutes

5. To make the filling, mix the butter, sugar, almond extract, vanilla extract and salt until it becomes light and fluffy

6. Add the eggs one at a time and mix, then slowly add the blanched ground almonds and mix until combined

7. Spread the jam onto the pastry, then scoop the filling mixture onto the top and spread until flat

8. Sprinkle the blanched flaked almonds over the top and bake for 35-40 minutes, then leave to cool and cut into squares
